Paella Valenciana
Ingredients:
- 1 cup Bomba rice
- 1/2 lb chicken, 1/2 lb rabbit (optional)
- 1/2 cup green beans
- 2 tomatoes, grated
- 3 tbsp olive oil, saffron, paprika
Instructions:
- Sauté meat and green beans in olive oil. Add paprika, then tomatoes.
- Add rice, saffron, and water. Simmer until rice absorbs liquid.
- Let rest before serving. Garnish with rosemary if desired.

Tortilla Española (Spanish Omelette)
Ingredients:
- 4 eggs
- 2 potatoes, thinly sliced
- 1 onion, sliced
- 1/4 cup olive oil, salt
Instructions:
- Sauté potatoes and onions in olive oil until soft.
- Beat eggs with salt, combine and cook in pan until firm.
- Flip to cook both sides. Let rest before slicing.

Patatas Bravas
Ingredients:
- 3 potatoes, cubed
- Olive oil for frying
- Smoked paprika, tomato paste, garlic, vinegar
- Salt, chili flakes
Instructions:
- Fry or roast potatoes until crispy.
- Make sauce: cook garlic, tomato paste, paprika, vinegar, and chili in olive oil.
- Toss potatoes in sauce and serve warm.

Gazpacho (Cold Tomato Soup)
Ingredients:
- 4 ripe tomatoes
- 1 cucumber, 1 red bell pepper
- 1 garlic clove
- 1/4 cup olive oil, 2 tbsp vinegar, salt
Instructions:
- Blend all vegetables until smooth.
- Drizzle in olive oil and vinegar. Chill for 2 hours.
- Serve cold with bread or garnish.
