Paella Valenciana

Ingredients:

  • 1 cup Bomba rice
  • 1/2 lb chicken, 1/2 lb rabbit (optional)
  • 1/2 cup green beans
  • 2 tomatoes, grated
  • 3 tbsp olive oil, saffron, paprika

Instructions:

  1. Sauté meat and green beans in olive oil. Add paprika, then tomatoes.
  2. Add rice, saffron, and water. Simmer until rice absorbs liquid.
  3. Let rest before serving. Garnish with rosemary if desired.
Tortilla Española

Tortilla Española (Spanish Omelette)

Ingredients:

  • 4 eggs
  • 2 potatoes, thinly sliced
  • 1 onion, sliced
  • 1/4 cup olive oil, salt

Instructions:

  1. Sauté potatoes and onions in olive oil until soft.
  2. Beat eggs with salt, combine and cook in pan until firm.
  3. Flip to cook both sides. Let rest before slicing.

Patatas Bravas

Ingredients:

  • 3 potatoes, cubed
  • Olive oil for frying
  • Smoked paprika, tomato paste, garlic, vinegar
  • Salt, chili flakes

Instructions:

  1. Fry or roast potatoes until crispy.
  2. Make sauce: cook garlic, tomato paste, paprika, vinegar, and chili in olive oil.
  3. Toss potatoes in sauce and serve warm.
Gazpacho

Gazpacho (Cold Tomato Soup)

Ingredients:

  • 4 ripe tomatoes
  • 1 cucumber, 1 red bell pepper
  • 1 garlic clove
  • 1/4 cup olive oil, 2 tbsp vinegar, salt

Instructions:

  1. Blend all vegetables until smooth.
  2. Drizzle in olive oil and vinegar. Chill for 2 hours.
  3. Serve cold with bread or garnish.
