Bacalhau à Lagareiro

Bacalhau à Lagareiro (Roasted Cod with Olive Oil)

Ingredients:

  • 2 salted cod fillets
  • 4 cloves garlic, sliced
  • 1/2 cup extra virgin olive oil
  • 4 potatoes, boiled and smashed
  • Parsley, olives, salt

Instructions:

  1. Soak cod overnight, changing water several times.
  2. Roast potatoes and cod with garlic and olive oil at 400°F until golden.
  3. Top with parsley and olives before serving.
Polvo à Lagareiro

Polvo à Lagareiro (Octopus in Olive Oil)

Ingredients:

  • 1 octopus (cleaned)
  • 6 garlic cloves
  • 1/2 cup olive oil
  • Potatoes, parsley, salt

Instructions:

  1. Boil octopus until tender. Let cool and cut into pieces.
  2. Roast with potatoes, olive oil, and garlic at 425°F.
  3. Garnish with parsley and serve hot.
Amêijoas à Bulhão Pato

Amêijoas à Bulhão Pato (Clams with Vinho Verde)

Ingredients:

  • 2 lbs fresh clams
  • 4 garlic cloves, minced
  • 1/4 cup white wine (Vinho Verde)
  • 1/4 cup olive oil, lemon juice, cilantro

Instructions:

  1. Clean clams thoroughly. Sauté garlic in olive oil.
  2. Add clams and wine. Cover and steam until clams open.
  3. Drizzle lemon and sprinkle cilantro before serving.
Açorda

Açorda (Portuguese Bread Soup)

Ingredients:

  • 4 slices stale bread
  • 4 cloves garlic
  • 3 tbsp olive oil
  • Hot water or broth, cilantro, salt

Instructions:

  1. Crush garlic with salt and sauté in olive oil.
  2. Add broth and bread. Simmer until soft.
  3. Add cilantro and serve with poached egg if desired.
Pão de Azeite

Pão de Azeite (Olive Oil Bread)

Ingredients:

  • 3 cups flour
  • 1 tbsp yeast
  • 1 tsp salt
  • 1/4 cup olive oil
  • 1 cup warm water

Instructions:

  1. Mix dry ingredients, then add olive oil and water to form dough.
  2. Let rise 1 hour. Shape and bake at 375°F for 25–30 min.
  3. Cool before slicing and serve with olive oil.
