Musakhan (Sumac Chicken on Flatbread)
Ingredients:
- 4 chicken thighs
- 2 onions, sliced
- 2 tbsp sumac
- Flatbread
- 1/4 cup olive oil, salt, pepper
Instructions:
- Sauté onions in olive oil. Add sumac, set aside.
- Roast chicken with olive oil, salt, pepper at 375°F until cooked.
- Layer onions and chicken over flatbread and serve.

Galayet Bandora (Tomato & Garlic Sauté)
Ingredients:
- 4 ripe tomatoes, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt, chili flakes (optional)
Instructions:
- Heat olive oil in a pan, sauté garlic.
- Add tomatoes, simmer 10–15 mins until thick.
- Season and serve with bread or rice.

Mthawamet Batata (Mashed Potato Dip)
Ingredients:
- 3 potatoes, peeled and boiled
- 2 cloves garlic, crushed
- 3 tbsp olive oil
- Juice of 1 lemon, salt
Instructions:
- Mash boiled potatoes with garlic, lemon, salt.
- Whisk in olive oil until creamy.
- Serve as a dip or side dish.

Maftoul Salad (Couscous-like Grain Salad)
Ingredients:
- 1 cup maftoul (Palestinian couscous)
- 1 tomato, diced
- 1 cucumber, diced
- 2 tbsp parsley
- 3 tbsp olive oil, lemon juice, salt
Instructions:
- Cook maftoul per instructions. Let cool.
- Mix with vegetables and herbs.
- Dress with lemon juice, olive oil, salt.

Manakish (Za'atar Flatbread)
Ingredients:
- 2 cups flour
- 1 tsp yeast
- 1/4 cup olive oil
- 1/2 tsp salt, warm water
- Za'atar mixed with olive oil for topping
Instructions:
- Make dough, let rise 1 hour. Roll into rounds.
- Spread za'atar mix on top. Bake 10–12 min at 400°F.
- Serve hot as a snack or side.
