Chicken Olive Tagine

Moroccan Tagine Style Chicken and Olives

Ingredients:

  • 4 chicken thighs
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 tsp ginger, 1 tsp turmeric
  • 1 cup green olives
  • 1 preserved lemon (optional)
  • 2 tbsp olive oil

Instructions:

  1. Sauté onion and garlic in olive oil. Add chicken and spices.
  2. Add olives and preserved lemon. Simmer with water until chicken is tender.
  3. Serve with bread or couscous.
Zaalouk

Zaalouk (Eggplant Salad)

Ingredients:

  • 2 eggplants, peeled and diced
  • 2 tomatoes, grated
  • 2 cloves garlic, minced
  • 1 tsp paprika, 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and chopped parsley

Instructions:

  1. Boil eggplant until soft. Drain well.
  2. In a pan, sauté garlic and spices in olive oil. Add tomatoes and cook.
  3. Add eggplant and mash. Cook until thick. Garnish with parsley.

Simple Moroccan Salad

Ingredients:

  • 2 tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1/4 red onion, finely chopped
  • 1 tbsp parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper

Instructions:

  1. Combine all ingredients in a bowl and toss.
  2. Chill before serving as a fresh side salad.

Moroccan Lamb Couscous with Extra Virgin Olive Oil

Ingredients:

  • 1 lb lamb, cubed
  • 1 onion, chopped
  • 2 carrots, 1 zucchini, sliced
  • 1 can chickpeas
  • 1 tsp cinnamon, 1 tsp turmeric
  • 2 tbsp olive oil
  • Couscous, prepared

Instructions:

  1. Sauté lamb and onion in olive oil with spices.
  2. Add vegetables, chickpeas, water. Simmer until tender.
  3. Serve over couscous and drizzle with more olive oil.
Carrot Soup

Moroccan Spiced Carrot Soup with Harissa Olive Oil

Ingredients:

  • 500g carrots, chopped
  • 1 onion, chopped
  • 1 garlic clove
  • 1 tsp cumin, 1/2 tsp cinnamon
  • 2 tbsp olive oil
  • 1 tsp harissa mixed with 1 tbsp olive oil

Instructions:

  1. Sauté onion, garlic, and spices in olive oil. Add carrots and water. Simmer until soft.
  2. Blend into a smooth soup. Swirl in harissa olive oil before serving.
