Ħobż Biż-Żejt (Bread with Oil)
Ingredients:
- 2 thick slices of crusty Maltese bread
- 3 tbsp extra virgin olive oil
- 1 tomato, halved
- Capers, olives, tuna, and onion slices
Instructions:
- Rub tomato halves over bread to moisten.
- Drizzle with olive oil and top with capers, olives, tuna, and onions.
- Serve as an open sandwich.

Bżar Mimli (Stuffed Peppers)
Ingredients:
- 4 bell peppers
- 1 cup cooked rice
- 1/2 lb ground beef or lamb
- 1 onion, chopped
- 2 tbsp olive oil
- Tomato sauce, parsley, salt, pepper
Instructions:
- Sauté onion in olive oil, add meat, cook until browned.
- Mix with rice, herbs, and sauce. Stuff into peppers.
- Bake at 375°F (190°C) for 30–40 minutes.

Minestra (Maltese Vegetable Soup)
Ingredients:
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 zucchini, chopped
- 1/4 cup olive oil
- 1 cup tomato sauce or crushed tomatoes
Instructions:
- Sauté onion in olive oil, then add vegetables and tomato.
- Cover with water, season, and simmer until tender.
- Serve warm with bread and olive oil drizzle.

Pasta Alla Trapenese with Black Olive Mollica
Ingredients:
- 8 oz spaghetti
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/3 cup breadcrumbs
- 1/4 cup chopped black olives
- Cherry tomatoes, basil, salt
Instructions:
- Cook pasta. In a pan, heat olive oil, sauté garlic, then add breadcrumbs and olives.
- Add tomatoes and basil. Toss with pasta and serve.

Bragioli (Beef Olives)
Ingredients:
- 4 thin beef slices
- 1/4 cup breadcrumbs
- 1 hard-boiled egg, chopped
- 1 tbsp chopped parsley
- 2 tbsp olive oil
- 1/2 cup red wine, 1 cup tomato sauce
Instructions:
- Mix filling ingredients and place on each beef slice. Roll and secure with toothpicks.
- Sear in olive oil. Add wine and tomato sauce. Simmer for 1 hour.
- Serve hot with vegetables or pasta.
