Salata Mashwiya (Grilled Pepper Salad)
Ingredients:
- 4 green peppers
- 2 tomatoes
- 2 garlic cloves
- 1–2 tbsp extra virgin olive oil
- Salt and lemon juice
Instructions:
- Grill or roast peppers and tomatoes until charred. Peel and chop finely.
- Mash garlic with salt, mix with vegetables and olive oil.
- Add lemon juice to taste and serve with bread or as a side.

Sfinz (Libyan Doughnuts)
Ingredients:
- 2 cups flour
- 1 tsp yeast
- 1 tsp sugar
- 1/2 tsp salt
- Warm water
- Olive oil for frying
Instructions:
- Mix ingredients into a sticky dough. Let rise 1–2 hours.
- Heat oil. With oiled hands, stretch dough into discs and fry until golden.
- Serve plain or with honey/jam.

Haraimi (Spicy Fish Stew)
Ingredients:
- 2 fish steaks (e.g. grouper)
- 2 tomatoes, grated
- 2 garlic cloves
- 1 tbsp harissa
- 1 tsp cumin
- Olive oil, salt
Instructions:
- Sauté garlic in olive oil. Add tomatoes, harissa, cumin, and salt.
- Add fish and simmer 20–25 minutes until cooked through.
- Serve with bread or couscous.

Libyan Tagine (Baked Casserole)
Ingredients:
- 1 lb minced beef or lamb
- 1 onion, chopped
- 2 potatoes, sliced
- 2 eggs
- Parsley, spices (cumin, paprika)
- Olive oil
Instructions:
- Sauté onion and meat with spices. Mix with parsley and beaten eggs.
- Layer sliced potatoes in dish. Pour meat mixture on top.
- Bake at 375°F (190°C) for 40 minutes.

Sharmoula (Spicy Fish Marinade)
Ingredients:
- 2–4 fish fillets
- 1 tbsp paprika
- 2 garlic cloves
- Juice of 1 lemon
- Chopped parsley and coriander
- Olive oil, salt, pepper
Instructions:
- Make marinade with all ingredients. Coat fish and marinate 1 hour.
- Grill or pan-fry fish until cooked through.
- Serve with rice, couscous or salad.
