Labneh (Strained Yogurt with Olive Oil)
Ingredients:
- 2 cups full-fat plain yogurt
- 1/2 tsp salt
- 2 tbsp extra virgin olive oil
- Za'atar for topping (optional)
Instructions:
- Mix yogurt and salt. Place in cheesecloth over a bowl and drain for 24–48 hrs.
- Form into balls or spoon into a bowl. Drizzle with olive oil and za'atar.

Fattoush (Crispy Pita Salad)
Ingredients:
- 2 cups mixed greens
- 1 tomato, diced
- 1 cucumber, chopped
- 1 radish, thinly sliced
- Toasted or fried pita chips
- Dressing: lemon juice, olive oil, sumac, garlic, salt
Instructions:
- Mix vegetables and greens in a bowl. Add pita chips.
- Whisk dressing ingredients. Toss with salad and serve immediately.

Shish Tawook (Grilled Chicken Skewers)
Ingredients:
- 1 lb chicken breast, cubed
- 1/4 cup yogurt
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp paprika, salt, pepper
Instructions:
- Marinate chicken in all ingredients for at least 2 hours.
- Thread onto skewers and grill until cooked through.
- Serve with garlic sauce or hummus.

Manakish (Za'atar Flatbread)
Ingredients:
- 2 cups flour
- 1 tsp yeast
- 1/2 tsp sugar
- 1/4 cup olive oil
- Za'atar mixed with olive oil for topping
Instructions:
- Prepare dough and let rise 1 hour. Roll into circles.
- Spread za'atar and olive oil mixture on top.
- Bake at 400°F (200°C) for 10–12 minutes until golden.

Mujadara (Lentils and Rice with Caramelized Onion)
Ingredients:
- 1 cup brown lentils
- 1/2 cup rice
- 2 large onions, thinly sliced
- 1/4 cup olive oil
- Salt, cumin
Instructions:
- Cook lentils halfway. Add rice and continue cooking until tender.
- Caramelize onions in olive oil. Mix some into lentils, reserve some for topping.
- Season and serve with yogurt or salad.
