Labneh

Labneh (Strained Yogurt with Olive Oil)

Ingredients:

  • 2 cups full-fat plain yogurt
  • 1/2 tsp salt
  • 2 tbsp extra virgin olive oil
  • Za'atar for topping (optional)

Instructions:

  1. Mix yogurt and salt. Place in cheesecloth over a bowl and drain for 24–48 hrs.
  2. Form into balls or spoon into a bowl. Drizzle with olive oil and za'atar.
Fattoush

Fattoush (Crispy Pita Salad)

Ingredients:

  • 2 cups mixed greens
  • 1 tomato, diced
  • 1 cucumber, chopped
  • 1 radish, thinly sliced
  • Toasted or fried pita chips
  • Dressing: lemon juice, olive oil, sumac, garlic, salt

Instructions:

  1. Mix vegetables and greens in a bowl. Add pita chips.
  2. Whisk dressing ingredients. Toss with salad and serve immediately.
Shish Tawook

Shish Tawook (Grilled Chicken Skewers)

Ingredients:

  • 1 lb chicken breast, cubed
  • 1/4 cup yogurt
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp paprika, salt, pepper

Instructions:

  1. Marinate chicken in all ingredients for at least 2 hours.
  2. Thread onto skewers and grill until cooked through.
  3. Serve with garlic sauce or hummus.
Manakish

Manakish (Za'atar Flatbread)

Ingredients:

  • 2 cups flour
  • 1 tsp yeast
  • 1/2 tsp sugar
  • 1/4 cup olive oil
  • Za'atar mixed with olive oil for topping

Instructions:

  1. Prepare dough and let rise 1 hour. Roll into circles.
  2. Spread za'atar and olive oil mixture on top.
  3. Bake at 400°F (200°C) for 10–12 minutes until golden.
Mujadara

Mujadara (Lentils and Rice with Caramelized Onion)

Ingredients:

  • 1 cup brown lentils
  • 1/2 cup rice
  • 2 large onions, thinly sliced
  • 1/4 cup olive oil
  • Salt, cumin

Instructions:

  1. Cook lentils halfway. Add rice and continue cooking until tender.
  2. Caramelize onions in olive oil. Mix some into lentils, reserve some for topping.
  3. Season and serve with yogurt or salad.
