Tomato and Basil Bruschetta
Ingredients:
- 4 ripe tomatoes, diced
- 2 tbsp extra virgin olive oil
- 1 garlic clove, minced
- Fresh basil leaves, chopped
- Salt and pepper to taste
- Sliced rustic bread, toasted
Instructions:
- In a bowl, combine diced tomatoes, garlic, basil, olive oil, salt and pepper.
- Let the mixture marinate for 10–15 minutes.
- Spoon over toasted bread slices and serve immediately.

Spaghetti with Garlic, Olive Oil and Chili
Ingredients:
- 400g spaghetti
- 4 garlic cloves, thinly sliced
- 1/3 cup extra virgin olive oil
- 1 tsp red chili flakes
- Salt and chopped parsley to garnish
Instructions:
- Cook spaghetti until al dente. Reserve some pasta water.
- Sauté garlic in olive oil until golden, add chili flakes.
- Toss spaghetti in the pan with the oil mixture and a splash of pasta water.
- Garnish with parsley and serve hot.

Genovese Focaccia
Ingredients:
- 500g flour
- 300ml water
- 2 tsp salt
- 1 packet dry yeast
- 3 tbsp olive oil (plus extra)
- Coarse salt and rosemary (optional)
Instructions:
- Mix flour, salt, yeast, and water into a dough. Let rise 1 hour.
- Spread in oiled tray, dimple the surface with fingers. Drizzle olive oil on top.
- Sprinkle coarse salt and rosemary. Let rise another 30 mins.
- Bake at 425°F (220°C) for 20–25 minutes until golden.

Caprese Salad
Ingredients:
- Fresh mozzarella, sliced
- Ripe tomatoes, sliced
- Fresh basil leaves
- Extra virgin olive oil
- Salt and black pepper
Instructions:
- Layer tomato and mozzarella slices alternately on a plate.
- Add basil leaves in between. Drizzle with olive oil.
- Season with salt and pepper. Serve fresh.

Genovese Pesto (Pesto alla Genovese)
Ingredients:
- 2 cups fresh basil leaves
- 2 cloves garlic
- 1/4 cup pine nuts
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- Salt to taste
Instructions:
- In a food processor, combine basil, garlic, pine nuts, and cheese. Pulse until finely chopped.
- With the machine running, slowly drizzle in olive oil until smooth.
- Season with salt. Serve with pasta or as a spread.
