Tomato and Basil Bruschetta

Tomato and Basil Bruschetta

Ingredients:

  • 4 ripe tomatoes, diced
  • 2 tbsp extra virgin olive oil
  • 1 garlic clove, minced
  • Fresh basil leaves, chopped
  • Salt and pepper to taste
  • Sliced rustic bread, toasted

Instructions:

  1. In a bowl, combine diced tomatoes, garlic, basil, olive oil, salt and pepper.
  2. Let the mixture marinate for 10–15 minutes.
  3. Spoon over toasted bread slices and serve immediately.
Spaghetti with Garlic and Oil

Spaghetti with Garlic, Olive Oil and Chili

Ingredients:

  • 400g spaghetti
  • 4 garlic cloves, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1 tsp red chili flakes
  • Salt and chopped parsley to garnish

Instructions:

  1. Cook spaghetti until al dente. Reserve some pasta water.
  2. Sauté garlic in olive oil until golden, add chili flakes.
  3. Toss spaghetti in the pan with the oil mixture and a splash of pasta water.
  4. Garnish with parsley and serve hot.
Genovese Focaccia

Genovese Focaccia

Ingredients:

  • 500g flour
  • 300ml water
  • 2 tsp salt
  • 1 packet dry yeast
  • 3 tbsp olive oil (plus extra)
  • Coarse salt and rosemary (optional)

Instructions:

  1. Mix flour, salt, yeast, and water into a dough. Let rise 1 hour.
  2. Spread in oiled tray, dimple the surface with fingers. Drizzle olive oil on top.
  3. Sprinkle coarse salt and rosemary. Let rise another 30 mins.
  4. Bake at 425°F (220°C) for 20–25 minutes until golden.
Caprese Salad

Caprese Salad

Ingredients:

  • Fresh mozzarella, sliced
  • Ripe tomatoes, sliced
  • Fresh basil leaves
  • Extra virgin olive oil
  • Salt and black pepper

Instructions:

  1. Layer tomato and mozzarella slices alternately on a plate.
  2. Add basil leaves in between. Drizzle with olive oil.
  3. Season with salt and pepper. Serve fresh.
Genovese Pesto

Genovese Pesto (Pesto alla Genovese)

Ingredients:

  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Salt to taste

Instructions:

  1. In a food processor, combine basil, garlic, pine nuts, and cheese. Pulse until finely chopped.
  2. With the machine running, slowly drizzle in olive oil until smooth.
  3. Season with salt. Serve with pasta or as a spread.
