Ful Medames
Ingredients:
- 1 can fava beans (or 1 cup dried, cooked)
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt, cumin, chopped parsley
Instructions:
- Warm beans with garlic and cumin.
- Mash slightly. Stir in lemon juice and olive oil.
- Top with parsley and extra olive oil. Serve with pita.

Ta'ameya (Egyptian Falafel)
Ingredients:
- 1 cup dried fava beans (soaked overnight)
- 1 onion, chopped
- 1 bunch parsley and cilantro
- 3 garlic cloves
- 1 tsp cumin, coriander, baking soda
- Salt, pepper, olive oil for frying
Instructions:
- Blend all ingredients into a paste. Let rest 30 mins.
- Shape into patties and fry in olive oil until golden.
- Serve hot in pita with tahini and veggies.

Baba Ghanoush
Ingredients:
- 2 eggplants, roasted
- 2 tbsp tahini
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 garlic clove, salt
Instructions:
- Scoop flesh from roasted eggplants.
- Blend with tahini, lemon juice, garlic, and salt.
- Drizzle olive oil on top and serve with bread.

Egyptian Lentil Salad
Ingredients:
- 1 cup brown lentils, cooked
- 1 tomato, diced
- 1 cucumber, diced
- 1/4 cup parsley
- 2 tbsp lemon juice, 2 tbsp olive oil
- Salt, cumin
Instructions:
- Mix lentils with vegetables and parsley.
- Add lemon, olive oil, salt, and cumin. Toss well.
- Chill and serve.

Koshary
Ingredients:
- 1 cup rice
- 1 cup macaroni
- 1/2 cup lentils
- 1 onion, sliced
- Tomato sauce (garlic, chili, cumin)
- Olive oil, salt, vinegar
Instructions:
- Cook rice, pasta, and lentils separately. Set aside.
- Fry onions until dark and crisp. Make tomato sauce with garlic and spices.
- Layer rice, lentils, pasta, sauce, and top with onions.
