Elioti (Cypriot Olive Cake)
Ingredients:
- 2 cups flour
- 1 tsp dry yeast
- 1/2 cup chopped black olives
- 1/4 cup olive oil
- 1/2 cup chopped fresh herbs (mint or parsley)
- Salt and warm water
Instructions:
- Mix flour, yeast, and salt. Add olives, herbs, and olive oil.
- Add warm water gradually to form dough. Let rise 1 hour.
- Bake at 375°F (190°C) for 30–35 minutes until golden.

Louvi (Black-eyed Peas with Greens)
Ingredients:
- 1 cup black-eyed peas
- 1 bunch Swiss chard or spinach
- 1 small onion, chopped
- 2 tbsp olive oil
- Salt and lemon juice
Instructions:
- Boil peas until tender. Drain and set aside.
- Sauté onion and greens in olive oil. Add peas and cook together.
- Drizzle with lemon juice before serving.

Fasolada (Bean and Vegetable Stew)
Ingredients:
- 1 cup dried white beans
- 2 carrots, sliced
- 2 celery stalks
- 1 onion, chopped
- 1/4 cup olive oil
- 2 tbsp tomato paste
- Salt, pepper
Instructions:
- Soak and boil beans until tender.
- Sauté onion, celery, and carrots in olive oil. Add tomato paste and beans.
- Simmer 30 minutes until thick and flavorful.

Kolokotes (Squash-Raisin-Bulgur Hand Pies)
Ingredients:
- 2 cups pumpkin or squash, grated
- 1/2 cup bulgur wheat
- 1/2 cup raisins
- 1/2 tsp cinnamon
- Dough: flour, olive oil, orange juice
Instructions:
- Mix squash, bulgur, raisins, cinnamon. Let bulgur soak in juices 1–2 hours.
- Roll out dough, add filling, and shape into crescents.
- Bake at 375°F (190°C) for 25–30 minutes.

Katimeri (Cypriot Pancake/Crepe)
Ingredients:
- 1 cup flour
- 1/4 cup olive oil
- 1/2 cup water
- Filling: cinnamon, sugar, olive oil, or halloumi cheese
Instructions:
- Make a smooth batter. Cook thin pancakes in oiled skillet.
- Spread filling inside and fold. Return to pan until golden and crisp.
