Elioti

Elioti (Cypriot Olive Cake)

Ingredients:

  • 2 cups flour
  • 1 tsp dry yeast
  • 1/2 cup chopped black olives
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh herbs (mint or parsley)
  • Salt and warm water

Instructions:

  1. Mix flour, yeast, and salt. Add olives, herbs, and olive oil.
  2. Add warm water gradually to form dough. Let rise 1 hour.
  3. Bake at 375°F (190°C) for 30–35 minutes until golden.
Louvi

Louvi (Black-eyed Peas with Greens)

Ingredients:

  • 1 cup black-eyed peas
  • 1 bunch Swiss chard or spinach
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • Salt and lemon juice

Instructions:

  1. Boil peas until tender. Drain and set aside.
  2. Sauté onion and greens in olive oil. Add peas and cook together.
  3. Drizzle with lemon juice before serving.
Fasolada

Fasolada (Bean and Vegetable Stew)

Ingredients:

  • 1 cup dried white beans
  • 2 carrots, sliced
  • 2 celery stalks
  • 1 onion, chopped
  • 1/4 cup olive oil
  • 2 tbsp tomato paste
  • Salt, pepper

Instructions:

  1. Soak and boil beans until tender.
  2. Sauté onion, celery, and carrots in olive oil. Add tomato paste and beans.
  3. Simmer 30 minutes until thick and flavorful.
Kolokotes

Kolokotes (Squash-Raisin-Bulgur Hand Pies)

Ingredients:

  • 2 cups pumpkin or squash, grated
  • 1/2 cup bulgur wheat
  • 1/2 cup raisins
  • 1/2 tsp cinnamon
  • Dough: flour, olive oil, orange juice

Instructions:

  1. Mix squash, bulgur, raisins, cinnamon. Let bulgur soak in juices 1–2 hours.
  2. Roll out dough, add filling, and shape into crescents.
  3. Bake at 375°F (190°C) for 25–30 minutes.
Katimeri

Katimeri (Cypriot Pancake/Crepe)

Ingredients:

  • 1 cup flour
  • 1/4 cup olive oil
  • 1/2 cup water
  • Filling: cinnamon, sugar, olive oil, or halloumi cheese

Instructions:

  1. Make a smooth batter. Cook thin pancakes in oiled skillet.
  2. Spread filling inside and fold. Return to pan until golden and crisp.
