Algerian Sunset Salad

Algerian Sunset Salad

Ingredients:

  • 2 oranges, peeled and sliced
  • 1 small red onion, thinly sliced
  • 1 handful black olives
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt, pepper, parsley

Instructions:

  1. Arrange oranges and onions on a plate. Top with olives.
  2. Drizzle with olive oil and lemon juice. Season and sprinkle with parsley.
Beef Potato Olive Tagine

Algerian Beef, Potato & Olive Tagine

Ingredients:

  • 500g beef, cubed
  • 3 potatoes, peeled and quartered
  • 1 cup green olives
  • 1 onion, chopped
  • 2 tbsp olive oil
  • Spices: turmeric, paprika, cinnamon

Instructions:

  1. Sauté onion in olive oil. Add beef and spices. Brown meat.
  2. Add potatoes and water to cover. Simmer 30 min, then add olives.
  3. Cook until potatoes are tender. Serve warm.
Chicken Olive Stew

Algerian Chicken and Olive Stew

Ingredients:

  • 4 chicken thighs
  • 1 cup green olives
  • 2 onions, sliced
  • 2 tbsp olive oil
  • 1 tsp turmeric
  • Lemon wedges for garnish

Instructions:

  1. Brown chicken and onion in olive oil. Add turmeric and a splash of water.
  2. Simmer 25–30 mins. Add olives and cook 10 mins more.
  3. Garnish with lemon wedges. Serve with bread or rice.
M’loukhiya

M’loukhiya (Jew's Mallow Stew)

Ingredients:

  • 250g dried mloukhiya (or powder)
  • 500g beef or lamb
  • 6 cloves garlic, minced
  • 1/2 cup olive oil
  • Salt, pepper, bay leaf

Instructions:

  1. Brown meat and garlic in olive oil. Add mloukhiya and water to cover.
  2. Simmer on very low heat 2–3 hours until sauce thickens.
  3. Serve with bread or rice.
Roasted Pepper Salad

Algerian Roasted Pepper Salad

Ingredients:

  • 4 bell peppers (red/green)
  • 2 tomatoes
  • 2 garlic cloves
  • 2 tbsp olive oil
  • Salt, cumin, lemon juice

Instructions:

  1. Grill peppers and tomatoes until blackened. Peel and chop finely.
  2. Mix with minced garlic, cumin, olive oil, and lemon juice.
  3. Chill before serving with crusty bread.
