Algerian Sunset Salad
Ingredients:
- 2 oranges, peeled and sliced
- 1 small red onion, thinly sliced
- 1 handful black olives
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt, pepper, parsley
Instructions:
- Arrange oranges and onions on a plate. Top with olives.
- Drizzle with olive oil and lemon juice. Season and sprinkle with parsley.

Algerian Beef, Potato & Olive Tagine
Ingredients:
- 500g beef, cubed
- 3 potatoes, peeled and quartered
- 1 cup green olives
- 1 onion, chopped
- 2 tbsp olive oil
- Spices: turmeric, paprika, cinnamon
Instructions:
- Sauté onion in olive oil. Add beef and spices. Brown meat.
- Add potatoes and water to cover. Simmer 30 min, then add olives.
- Cook until potatoes are tender. Serve warm.

Algerian Chicken and Olive Stew
Ingredients:
- 4 chicken thighs
- 1 cup green olives
- 2 onions, sliced
- 2 tbsp olive oil
- 1 tsp turmeric
- Lemon wedges for garnish
Instructions:
- Brown chicken and onion in olive oil. Add turmeric and a splash of water.
- Simmer 25–30 mins. Add olives and cook 10 mins more.
- Garnish with lemon wedges. Serve with bread or rice.

M’loukhiya (Jew's Mallow Stew)
Ingredients:
- 250g dried mloukhiya (or powder)
- 500g beef or lamb
- 6 cloves garlic, minced
- 1/2 cup olive oil
- Salt, pepper, bay leaf
Instructions:
- Brown meat and garlic in olive oil. Add mloukhiya and water to cover.
- Simmer on very low heat 2–3 hours until sauce thickens.
- Serve with bread or rice.

Algerian Roasted Pepper Salad
Ingredients:
- 4 bell peppers (red/green)
- 2 tomatoes
- 2 garlic cloves
- 2 tbsp olive oil
- Salt, cumin, lemon juice
Instructions:
- Grill peppers and tomatoes until blackened. Peel and chop finely.
- Mix with minced garlic, cumin, olive oil, and lemon juice.
- Chill before serving with crusty bread.
